Chocolate Raspberry Cupcakes!

Another raw dessert except this time i kind of decided to just wing it and see what i could come up with! These cupcakes have chocolate in the crust and raspberries/lemon juice in the filling! They turned out super yummy :)

Here's the recipe!

Crust:

2 cups walnuts
1 cup dates
1/4 cup cacao powder (raw chocolate powder)
1 tbsp coconut oil
1 tbsp vanilla
Pinch of sea salt

Blend up the dates in a food processor or Vitamix, then add in the walnuts and other ingredients. Blend until a smooth dough.

"Cheesecake" Filling:

2 cups cashews
1 tablespoon vanilla
1 cup raspberries
1/4 cup coconut oil
1/2 cup sweetener (honey, agave, dates)
1/4 cup of lemon juice
1/2 tsp sea salt

Blend cashews in a food processor or Vitamix, then add in all other ingredients and blend until completely mixed and smooth.

Assembly:

Spread out the chocolate crust into a pan at about 1/4-1/2 an inch thick. Then spread the cheese filling over the crust. Put the cheesecake in the freezer to chill for a few hours, or overnight. When i make a big cake i line the pan with parchment paper so that i'm able to just take the cake right out of the pan once frozen, and cut into slices that way. If you're making them in cupcake molds you don't need to worry about this!

Yummy 'n Raw!

Hey guys!

So i know i stopped posting here for a loooonnng time but i've decided to come back! And with some new ideas for my food blog! I decided to focus on raw recipes/meals for a bit, since i've been really into the whole raw food thing lately! I still do eat cooked foods, but have been focusing a lot more on eating as much raw as possible!

The first thing i want to share, my MOONIE PIES!

The lovely Heathy Pace from sweetlyraw has a FAB recipe book on these tasty treats, and i couldn't pass it up for only $5!

I didn't think i'd be able to pull this one off, as it seemed tricky and complicated (the kind of recipe that never turns out well with me!) but they actually came out great and they were DELISH!

The only changes I made to the vanilla moonie recipe were adding 1 cup of raspberries to the filling, and changing the way i put them all together to say a little extra time!

Instead of putting down the first layer, letting that chill, then putting down the filling layer and letting that chill, and then topping it off with the last layer and chilling all together, what i did was:

Put all of the "cookie" down as 1 layer, and immediately put down the filling layer on top. I chilled that in the fridge for a few hours, then took it out and cut it in half, folding the 2 pieces so that the filling on both pieces was now sandwiched together! I then ended up with the 3 layers like the original recipe of cookie, filling, cookie. It worked great! And saved me tons of time, which is always a plus for me!

Alright, i'll stop rambling on about the moonies and show you guys some PICTURES! Just looking at these makes my mouth water...too bad they're all gone :( haha.
