Gahhh i've had a rough week. i've been feeling sicker than usual, and been super weak. my bp is also lowish (when isn't it?). it's hard to keep up with the no preservative/no refined sugars diet when feeling crappy. it's so easy to just throw a frozen dinner in the microwave for a few minutes, but washing and shredding lettuce, cutting up avocado, tomatoes and making homemade salad dressing for your salad can seem like an impossible feat when when you feel like death. but i've managed to stick with it..and have relied a lot on just plan fruits and veggies, along with nuts and seeds. here's a yummy breakfast from a couple days ago!


cinnamon oats with raisins :) simple but good!


i juiced a few lemons and drank the juice straight for the vitamin c, and because lemon juice supposedly can dissolve kidney stones (i had an ultrasound back in october and the doctor said she saw a stone in each kidney on it) not sure i've done it quite a few times, and i'm not sure if it works, but i guess i'll find out when i have my follow up ultrasound in april!

Annnd my lovely mom picked up a couple things for me from the Natural Food Pantry including: Jennies Coconut Macaroons- these things are TO DIE FOR. Sooooo good. and only 3 ingredients! (coconut, honey, egg whites) (Also got a ton of Cliff bars from the states. the bff went down and picked a bunch up for me over Reading Week)

Tons of food!

So first off, i made the banana soft serve ice cream and it was super yummy!



How to make: just blend up 2 frozen bananas and added in a scoop of PB and some cinnamon :) yummm!

I also made the oat bars from the amazing Kath Eats site. they were super yummy. they aren't sweet/crunchy like a regular granola bar, but i still really liked them. and they're easy to make, always a good thing ;)



And finally, me and mike had a picnic yesterday! (yes indoors! haha). he made fruit salad and veggies and dip and cucumber sandwiches (using my recipe of course! lol) and these oatmeal sugar cookie things. haha. all of it was amazing :)

He also got me a rose and a Snuggie (i thought these things were the dumbest things ever until i tried one on....SO SO SO comfy! no joke. lol)

All in all a very fun Valentine's Day! I've also been informed that almost all my homemade chocolates have been devoured, so they were a success! haha. hope you all had amazing weekends! xxo

Valentines Day!

So it may not be the healthiest of gifts, but i made Mike these:

We're all allowed to indulge once in a while! And Valentine's Day REQUIRES chocolate. it's like an unwritten law. haha. anyways i also painted this cute box for the chocolates.

This proved to be a lot harder than i thought it would be.. so it looks quite 5th grade art class-ish? haha oh well..it's the thought that counts right?

Ammaaaazing Discovery!

Like the title says, i have discovered something amazing! haha.

Healthy 1 minute apple crisp!

Healthy Apple Crisp

How to make this deliciously easy snack!

2 apples (sliced)
1/2 cup oats
1 tsp cinnamon
1 tbsp agave/honey/brown sugar (whatever you choose)
1 tbsp coconut oil/Earth Balance/butter (also whatever you choose)

Put it all in a bowl and microwave on high for 1 minute. Then mix it all up and voila! Delicious and healthy!


Breakfast this morning was a bowl of oats with a dash of cinnamon, a homemade larabar broken up and mixed in, as well as some strawberries! yummmy!

Tonight, i'll be trying raw banana "ice cream"! the bananas are in the freezer freezing as we speak! can't wait! :)

Not-so-interesting food day

So i've had horribly bad cramps all day long so food today has been plain and boring. haha. but i thought i would post anyway..

Breakfast was vanilla yogurt with a crumbled up homemade larabar tossed into it! so yummy!

Lunch was a piece of whole grain toast with "Just Peanuts" peanut butter and half a banana. And some baby carrots and a Chocolate Chip Cliff Bar :)



Dinner isn't looking good so far..i have no energy to make anything and mom's working late sooo...we shall see!

My First Healthy Post!

So i figured my first food related post should be pretty monumental, and so i contemplated what it could be for quite a while. I finally decided on....(drumroll please) my HOMEMADE LARABAR RECIPE!!

I loveloveLOVE larabars. probably a little TOO much. and i go through at least 1 a day, so they've been draining my pockets like crazy at $2 a piece! So with a little research, and the right ingredients, i was able to concoct up a recipe that tastes shockingly similar to the original larabar.

I actually like these WAY better than larabars...probably because they aren't as dry, and i find they've got even more flavour! It took a while to get the consistency i wanted (i found most of the recipes i found online were too dry) but it was well worth the effort!



Okay so it's not the most gorgeous piece of food in the world (or as my boyfriend so elegantly put it, "it looks like a poop") but damn is it tasty! They are so easy to make too!

I did 2 variations; cinnamon roll and peanut butter and jelly.

Peanut Butter and Jelly:

Combine 2/3 cup peanuts with a pinch of cinnamon and chop in food processor/blender until finely chopped.

Transfer to a big bowl.

Combine 1/2 cup of pitted dates in blender with 1/2 cup of dried cherries in blender. Blend until it becomes a paste consistency.

Add to bowl and knead until mixed thoroughly. Form into balls or bars and wrap in saran wrap (makes about 4 bars). cool them in the fridge for a few hours before eating them 'cause i think it tastes better! They will keep in the fridge for a few weeks.

For the cinnamon roll flavour the amounts are as follows:
  • 1.5 cups pitted dates
  • 1/3 cup raisins
  • 1/3 cup walnuts
  • 1/3 cup almonds
  • 1/3 cup raw cashews
  • 1/2 tsp cinnamon
